Pugh Wins WKDK "Ice Cream Churn-Off"
Becky
Pugh of Prosperity won the WKDK June Dairy Month "Ice
Cream Churn-Off" on Friday morning.
Her winning
entry, peanut butter ice cream, delighted
judges with its smooth texture and rich flavor.
Second place honors went to Sally Yoder for her butter
pecan entry.
Both recipes
are presented below, along with a tart lemon ice cream
that judges found cool and refreshing.
The program was
part of AM-1240’s June Dairy Month "Salute to Dairy in the ‘Berry"
on the Coffee Hour, Thursday and Friday mornings from 9 to 10 a.m. WKDK’s
annual salute promotes the use of dairy products for good health--and
for simple goodness--as it highlights the role agribusiness plays in
our local economy.
"What a cool
way to start the day, with ice cream for breakfast!" said Andy
Hawkins, who co-hosts the Dairy Month Salute with Jimmie Coggins, Sue
Summer, and Heather Hawkins.
The Ice Cream Churn-Off
competition was sponsored by Mike Hawkins, Nationwide Insurance. He
said, "I want to thank everyone who made ice cream for the Churn-Off,
and I want to thank the listeners of WKDK for supporting June Dairy
Month. Agriculture plays an important role in our local economy, and
this is a fun way to honor our local farmers for making our economy
stronger."
Judges included
three sponsors: Tommy Easterby of the Piggly Wiggly, Rita Cromer of
the Farm Bureau, and Beth Hipp of Elizabeth’s on Main. Other judges
were Debbie Turner, Sonny Ringer, and Sarah Mosely, who performed summer
songs during the judging. Dr. John Thompson, WKDK’s medical expert for
June Dairy Month, again reminded the radio audience, "Eat more
dairy. It’s good for you."
Yes, eat more dairy.

Peanut
Butter Ice Cream
By Becky Pugh (John
W. Pugh’s recipe)
1 tall Carnation
1 condensed milk
(or another Carnation)
About 2-1/2 C. sugar
2 C. creamy peanut
butter
Whole milk, about
1/2 gal.
Mix regular milk
and peanut butter in food processor. Pour mixture over a gallon size
pan and add other ingredients. Stir and pour into churn. Makes four
quarts.
Butter Pecan Ice Cream
1-1/2 C. sugar
6 eggs, beaten
1 tsp. vanilla
2 boxes instant
Vanilla pudding
pinch of salt
2 pints cream
Pecans: 2 C. pecans
1 stick butter
1/2 C. brown sugar
(Toast pecans, melt
butter, add sugar and nuts)
Mix pudding
as directed on box. Add all other ingredients into freezer. Fill with
milk. Add toasted pecans last.
Tart Lemon Ice Cream
1 large lemon, juiced
and zested
1 C. white sugar
1 C. whipping cream
1 C. whipping cream,
chillled
Combine the lemon
zest and sugar in the container of food processor. Blend until zest
is very fine. In medium bowl, stir together the sugar and 1 C. cream
until sugar has dissolved, then stir in the lemon juice. In a separate
bowl, whip the chilled heavy cream until stiff but not grainy. Gently
fold the whipped cream into the lemon mixture until evenly blended.
Pour the mixture
into a 9x5 loaf pan, cover with plastic wrap. Freeze for 3 hours or
until firm.

Churches Enter WKDK "Slice o’ Heaven Pound Cake Contest."
Twenty-six
entries were received in the WKDK June Dairy Month "Slice o’ Heaven"
pound cake contest on Thursday.
Sally Yoder
of Restoration Outreach Center baked the winning entry, a cream
cheese pound cake. She was awarded the first-place prize of $100
for her church and an individual prize of $25. Second place honors went
to Johnnie Chaplin of St. Mary’s AME Church for a whipped
cream pound cake.
The program was
part of AM-1240’s June Dairy Month "Salute to Dairy in the ‘Berry"
on the Coffee Hour, Thursday and Friday mornings from 9 to 10 a.m.
"The judges
had a deliciously difficult morning, All the entries were wonderful,
buttery and with a silky texture. What a dairy-good way to start the
day!" said Andy Hawkins, who co-hosts the Dairy Month Salute with
Jimmie Coggins, Sue Summer, and Heather Hawkins.
The pound cake competition
was sponsored by Henry B. Summer and Co., and he thanked those who participated.
"We are overwhelmed by the response. I want to thank each and every
cook for representing his or her church with an outstanding entry, and
I want to thank all 26 of them for the sweet reminder of church suppers
and youth meetings where pound cake was served. We are blessed to live
in a community where people of faith still nurture one another in spirit
and in fellowship."
The message of the
morning? Eat more dairy. It is good for you, and it is good for the
economy of Newberry County. Jimme Coggins said, "Newberry is number
one in the state in dairy production, and we can be very proud of the
strong contribution dairy makes to our local economy."
WKDK’s June Dairy
Month celebration is a great deal of fun, but it is intended to highlight
the strength of local agribusiness.
"The
winning recipe for pound cake follows, as does the second place entry
and another cake from Michelle Bedenbaugh that
was most creative. Everyone is invited to enjoy, enjoy!" said Sue
Summer.

After judging, the
pound cakes were given to law enforcement, fire departments and emergency
responders. All were excited about the gift of cake from Newberry’s
finest cooks.
Coggins
would like to thank everyone who has made this year’s Salute to Dairy
in the Berry such a great success, guests and contest participants as
well as sponsors. "We’ve had fun along the way, and we hope we
have reminded our listeners how important dairy is to our health, personally
and economically."
Cream
Cheese Pound Cake

1-1/2 C. butter,
softened
1 8 oz. cream cheese,
softened
3 C. sugar
6 eggs
3 C. all purpose
flour
1/8 tsp. salt
1 Tbsp. + 1/8 tsp. vanilla
Beat butter and
cream cheese until well blended. Beat in sugar, add eggs one at the
time.
Mix flour and salt
together and add to butter mixture. Then fold in vanilla.
Bake 330 degrees
for 1 hour 30 minutes.
Garnish
with strawberries and powdered sugar. Enjoy!
Whip Cream Pound Cake

2 sticks butter
3 C. sugar
6 eggs
3 C. all-purpose
flour
Pinch of salt
1/2 pint whip cream
1 tsp. vanilla flavoring
1 tsp. lemon flavoring
1 tsp. butternut
flavoring
Cream butter and
sugar, add eggs one at a time, add sifted flour and salt alternately
with whip cream. Add flavorings. Pour into a greased, floured tube pan.
Put cake in cold oven. Bake on 325 degrees for 1 hour and a half.
Praline
Cake

1 C. all-purpose
flour
1 Tbsp. cocoa powder
1/2 tsp. baking
soda
2/3 C. buttermilk
1 C. light brown
sugar
1/2 stick butter
1 egg
1/2 tsp. vanilla
Preheat oven to
350 degrees. Oil cake pan.
Sift together the
flour, cocoa, and baking soda. Set aside.
In microwave on
low, warm buttermilk and butter together until butter is melted.
In large mixing
bowl, combine milk mixture, sugar and eggs. Beat well (about 2 minutes),
Add sifted dry ingredients
and beat well. Stir in vanilla. Bake about 35 minutes, depending on
oven. Check doneness with cake tester.
Sauce:
1/2 stick butter
1 C. dark brown
sugar
6 Tbsp. whole milk
* 1 C. toasted,
chopped pecans
Heat oven to broil.
Combine sauce ingredients
in large microwaveable container. In 2 minute intervals, microwave for
approximately 8 minutes. Using cake tester, poke holes in cake. Pour
part of sauce into cake. Place cake back in oven under broiler for approximately
5 minutes. Remove cake from oven and invert onto serving dish. Wait
for cake to fall out (may take 4 or 5 hours).
* Reheat remaining
sauce, adding pecans for 4-6 minutes. Pour onto top of cake and serve.

Cheese Recipes

Clemson Blue Cheese Dip
3 lb. cream cheese
1 large red onion, diced
1 Tbsp. granulated garlic
1 C. heavy cream
4 lb. Clemson Blue Cheese
1/2 tsp. salt
1/2 tsp. white pepper
1 C. blanched, shredded carrots
Mix all ingredients together.
Blue Cheese and Cracked Peppercorn Butter
4 1/2 kilograms butter
1150 grams blue cheese
75 grams black peppercorn, cracked
20 grams Steak Seasoning, SpiceWise
Soften butter, add blue cheese and cracked peppercorn. Blend thoroughly
and roll in plastic wrap. Refrigerate or freeze.
