Beaufort Stew l Harvest Vegetables
with Curry Dip l Southern Caviar l Sausage

Mexican Dip and
Cream Cheese Dip
provided by Eric Wells
Mexican Dip
1 4oz. can green chilies, diced
1 4oz. can black olives, chopped
1 Bunch green onions, chopped
1 Tomato, chopped
1 1/2 blocks of Monterey Jack w/Jalapeno pepper cheese
Italian Dressing
Mix all ingredients, small squirt of Italian dressing over to moisten.
Do not want dip runny so be careful with the dressing.
The dressing is used to hold all ingredients stick together and make moist.
Chill, serve with crackers such as Wheat Thins
Note: You may omit black olives.
Cream Cheese Dip
2 packages of Cream Cheese
1/2 cup Mayo
1/3 cup Parmesan Cheese
10 Slices of bacon or 1 pkg. of already cooked Real bacon bits
Green Onions
Soften Cream to room temperature
chop green onion into small pieces
Mix all ingredients together.
Chill for approximately 45 minutes to an hour and serve with crackers
such as Wheat Thins.

Wontons
1 package
Jimmy Dean sausage-Hot
8 oz
cream cheese, softened
4 oz
shredded cheddar cheese
4 tbsp
ranch dressing
dash
of salt & pepper
1 package
of wontons (found in produce section)
Cook sausage
thoroughly and drain. Place wontons into mini muffin pan cups.
Mix together cooked sausage with all other ingredients.
Spoon 1 tsp-1 tbsp of mixture into each wonton and close wonton at top.
Bake at 350* for 15-20 minutes or until top of wonton browns.

I served it at my Newberry College reunion party.
It was a huge success.
Serve
with those scope tortilla chips. It’s also really good with thin cornbread.

cans black eyed peas, rinsed and drained
2 cans Rotel diced tomatoes with chiles*
1 can shoepeg corn*
2-3 jalapeno peppers, diced and seeded (to taste)
1/2 bunch cilantro, finely chopped (to taste, it can be quite strong)
8 oz. zesty Italian dressing

2 Recipe: Harvest Vegetables with Curry Dip

Harvest Vegetables with Curry Dip

Curry Soy Dip
1 cup mayonnaise
1 cup sour cream
2 tbsp sweet chili sauce
1 1/2 tbsp soy sauce
1 tbsp curry powder
1/2 tsp cayenne pepper
1/8 tsp Chinese five-spice powder
Vegetables
1/2 lb. asparagus
2 tsp salt
1 English cucumber
1/2 lb. sugar snap peas
1/2
lf. baby carrots
Directions:
Curry Soy Dip:
1. Combine dip ingredients in medium bowl and mix well. Cover and refrigerate
until ready to serve.
Vegetables:
1. Trim asparagus ends. Bring a large pot of water to a boil.
Add asparagus and salt; cook until asparagus is tender-crisp, about 2
minutes.
Drain, rinse with cold water and drain again. Pat dry with paper towels
and chill until ready to serve.
2. Cut cucumber into sticks about 3 inches long and 1/2 inch wide. Arrange
all vegetables on a serving platter.
3. Serve with chilled dip.

1 Recipe: Beaufort Stew (aka Low Country Boil)

Beaufort Stew
3 packs of frozen sweet corn (27 pcs)
16 red potatoes
6 pounds of shrimp
4 pounds of Hillshire beef sausage
1 crab boil
Bring water to boil with crab boil.
Add potatoes - 12 minutes
Add sausage - 6 minutes
Add corn - 4 minutes
Add shrimp - 3 minutes
Serves 8 to 10 people.
